Ingredients
- 250gcoral lentils
- 1onion
- 500gsweet potato
- 400mlcoconut milk
- 150gspinach leaves
- 200grice
- 1Mild curry Home recipe
- 1Ginger
- 2tsneutral oil
- salt
- pepper
Preparation tips
Peel and slice the onion. Peel the sweet potatoes and cut them into small 1cm cubes.
Rinse the red lentils quickly
In a large saucepan, heat the oil and brown the onion for 2 minutes. Add the curry powder and ginger, cook for 1 minute. over medium heat then pour in the coconut milk.
Add the coral lentils, diced sweet potatoes and 500ml of water, add salt halfway through cooking.
Cook covered over low heat for 20 minutes, stirring often and adding a little water if necessary.
Place the rice in a pan of salted water and cook for 10 minutes. from boiling. Drain the rice once cooked and keep it warm.
Wash the spinach, remove the large stems and add them to the pan. Add salt and pepper. Check the cooking of the sweet potatoes which should be tender. Continue cooking for a few minutes if necessary.
Serve the curry with the rice.
Add a squeeze of lemon juice if you find this dish a little sweet.
You can add more curry powder, Espelette pepper. And for big appetites, you can add hard-boiled eggs like in India. Coral lentils contain fiber, hence their low glycemic contribution, as well as vegetable proteins. Combining them with rice promotes the assimilation of these proteins.
